We have their Prunier Tres Vieille Grande Champagne XO Cognac so that you can see for yourselves. It comes from a blend of three vintages: 1937, 1939, 1947.
The distillery recommends having this XO with desserts and cigars. We think a rich chocolate mousse is a fine choice. The folks at imbibe.com decided to do some research about the cigar question and XO's, so they had a panel convene on the cigar terrace of the Soho Whisky Club in London. They claim that they "produced some matches that verged on the transcendent." In order of preference, they chose the following cigars: Cohiba Behike BHK 52, the Hoyo de Monterrey Epicure No.2, and the Punch Medalla de Oro. We're also hearing some chatter that people are apairing foods during the meal with XO's, and what better one to try that on than this Prunier? Chef de Cuisine at Chateau de Bagnolet feels that to be successful, you must be sure to balance the richness of the XO's flavors, as well as match them, with flavors like vanilla, pepper or jasmine for example. He thinks that Asian cuisine is perfect because it integrates the most interesting ingredients and spices that pair with Cognac. Beef bourguignon in savory tarts could work well. If you're feeling experimental, he says play with contrasts. Serve a frozen XO with foie gras. The smooth texture of the liver with the 'crunch' of the Cognac will be incroyable!Et voilawinelovers! The major fruit aromas are crystallized fruits and citrus. The spices are vanilla, cinnamon and pepper. The floral notes are jasmine and pink flowers. Sweetness with honey and blond toffee, wood with old oak casks, and cigar boxes and sandalwood together with light tobacco, chocolate and fresh pastry. This is an harmonious and well-balanced Cognac with a very pleasant nose and palate, typical of a Grande Champagne. A great Cognac for end of meals and/or cigar smokers."
