"This wine of character opens with an intense bouquet of red fruit, rose and violet, and exotic..." ~ Concours General Agricole Paris 2016Now under the guidance of the 16th generation of the Ricard-Boyer family, Chateau Salettes has turned out yet another delicious vintage of Bandol Rose. Unlike other lighter, fruitier Roses, this Bandol Rose boasts a beautifully developed personality and depth of flavor. Fill everyone's glasses and let them get acquainted while they munch on toasted pullman bread topped with crispy asparagus, prosciutto, tomato and melted cheese. That ought to get the juices flowing... We recommend you treat yourselves to a tasty warm weather supper of grilled lobster salad over greens tossed with garden tomatoes, fresh corn and a fresh tarragon/chive vinagrette. Or, marinate some chicken in white wine, apricot preserves, scallion, garlic and ginger and then grill it to perfection. This lively Salettes is perfect for it. If you've got some time on your hands, make it ham, leek and gouda souffles, to go with the earthy side of this Provencal perfection. As for your finale, make it a young Camembert or Brie, and that ought to wrap things up nicely. Quand pouvons-nous manger??!
