This Hawk and Horse is built to age, so you may put a spotlight on it in your wine cabinet, and ponder your recipes for several years to come, or go for it right now - your choice! Open your bottle to give it some air and then delight in your first purplish-red glasses with bison sliders draped with port caramelized onions and melted sharp cheddar cheese. The sweet/sharp combination of the toppings will be perfect with the pure flavors in this organic, biodynamic red. As for entrees, the vintners recommend grilled pepper steak, which will be terrific opposite the lush, ripe fruit of the wine. If you feel like fancying it up a little, make it grilled filet mignon over charred onions and zucchini with a balsamic sauce. If you'd like something which evokes the delicious fruit of the wine, we say roast leg of lamb with a Cabernet, cranberry and whole grain mustard glaze. Winemakers Dick Peterson and Scott Harvey cast their vote for chocolate souffle for dessert. The flip side would be an aged Gouda cheese. Either way, we think you'll love it!

On the ranch we pursue a true biodynamic “closed system” where biodynamic preparations are sourced primarily from our property. A picturesque aspect of this is the Scottish Highlander cattle, which play an important role."
