    What to cook for today's Hawk and Horse Vineyards Cabernet Sauvignon?  It'll have to be meaty to stand up to this robust, full-bodied California Cab. This Hawk and Horse is built to age, so you may put a spotlight on it in your wine cabinet, and ponder your recipes for several years to come, or go for it right now - your choice! Open your bottle to give it some air and then delight in your first purplish-red glasses with bison sliders draped with port caramelized onions and melted sharp cheddar cheese. The sweet/sharp combination of the toppings will be perfect with the pure flavors in this organic, biodynamic red. As for entrees, the vintners recommend grilled pepper steak, which will be terrific opposite the lush, ripe fruit of the wine. If you feel like fancying it up a little, make it grilled filet mignon over charred onions and zucchini with a balsamic sauce. If you'd like something which evokes the delicious fruit of the wine, we say roast leg of lamb with a Cabernet, cranberry and whole grain mustard glaze. Winemakers Dick Peterson and Scott Harvey cast their vote for chocolate souffle for dessert. The flip side would be an aged Gouda cheese. Either way, we think you'll love it!

We were wowed: it was love at first nosing. Dramatic aromatics of roses and cranberries are startling. While the texture begins with an indulgent plushness, it becomes dusty and mouth-smacking mid-palate. The more you sip, the blacker the fruit and a sinewy stream of dark chocolate runs parallel to the pool of plums and ink-berries." July 2012 

    Winery: "Aromas of wild rose, cedar and spice. Rich and full bodied with notes of cocoa, berries, earth, balanced by firm yet velvety tannins. Perfect with grilled pepper steak or sip with chocolate soufflé. Beautiful now yet with structure enough to age into the next decade.

    Grown on our 18 acre estate mountain vineyard at elevations of up to 2,200 feet in rocky in red volcanic soil. The vineyard is CCOF Organic and Demeter Biodynamic certified. On the ranch we pursue a true biodynamic “closed system” where biodynamic preparations are sourced primarily from our property. A picturesque aspect of this is the Scottish Highlander cattle, which play an important role."
