Delicious fruit and a gorgeous backbone which is just begging for meaty winter fare. Your first glass will be fast friends with some roast pork belly toasts with blood orange barbecue sauce topped with pickled red onions. Otherwise known as a symphony of savory. As for your entree, if you're hankering for something else French, and perfect for the cold, set aside some time and put up a big pot-au-feu. Among other things, it's made up of short ribs, brisket, garlic sausage and veal breast, all cooked to melting tenderness, with a beautifully reduced, aromatic broth, and lots of crusty bread and other things to dip into the sauce. What's not to like? Perhaps a little less complicated but equally good is seared duck breast with red wine sauce and candied kumquats. They'll bring out the lovely fruit in this Morgon. And finally, for a wow factor, we love a standing rib roast with a mustard seed crust and roasted balsamic onions. The good news: whichever you choose, you get to drink this G. Descombes with it. The structured style from Morgon is powerful, fleshy and perfectly respectable.
