Pour on a generous spoonful of Bearnaise sauce made with lots of pepper. The butter of the Bearnaise will be a great balance for this super rich Cabernet, and the pepper will marry with its tannins like a pro. Saute some dark mushrooms and toss them with wild rice as an accompaniment. They will work beautifully with the cedar and roasted coffee nuances of the wine. Another delicious option is a Spanish lamb ragout with roasted sweet peppers. The dark red fruit of the wine pairs beautifully with the luxurious sweetness of the tomato in the ragout. Winery: "The 2012 vintage was broadly described as outstanding, exceptional, ideal and a gift from Mother Nature. This is the first of three consecutive heralded vintages. The dry winter was the beginning of the extended drought period in California, but well-timed rainfall in February and March, as well as two inches in mid-April, filled the soil profile before the coming season. Budbreak was even and bloom progressed quickly, leading to clusters with both high quality and high quantity potential. The summer weather was wonderfully cooperative, with only a single day’s high above 100 degrees from May through the end of September before a short heat event on October 1st and 2nd. We began harvest on September 11th and concluded on October 19th, after which an inch of much-needed rain fell on October 23rd."
