This Lancaster Estate Cabernet Sauvignon will knock your socks off. Produced right next door to the Knights Valley and Chalk Hill appellations, you will be hard pressed to find comparably dense and vast fruit, spice accents, oak and ample tannins which slowly unfold into such a spectacular finish. This Estate Cab must be in the company of hearty meat dishes. Lamb, meats and game are just what you need. If you've about had it with the chill, make your favorite beef stew and be sure there's plenty of rich, robust sauce for the rice or bread. The structured tannins and oak in this Lancaster Cabernet set up the perfect match for grilled meats. We like lamb chops grilled with Provencal herbs, served with pencil asparagus and marinated feta. Or, how about grilled double cut pork chops with an orange-tomato marmalade on the side which evokes the fruit in this wine? The layers of complexity and the ample power of this Cabernet's palate allow it to work well with game if that's your preference. We suggest a bison hanger steak with grilled leaks and sauteed baby potatoes. Hands down, the best way to end this meal is dessert (in our opinion, of course). The lush, ripe fruit of this Alexander Valley Cab, combined with its spice accents virtually require that you whip up a bittersweet chocolate and Cabernet Sauvignon butter cake.
