Winery:  "This wine begins with aromas of raspberries, black cherries and a hint of vanilla, which continue on a red fruit-driven palate. Ripe flavors of cherries, plum and currant mingle with hints of nutmeg and graphite, with a slight toasty oak
component. Silky, youthful tannins are coating on a rich, textured mid palate, continuing on a lingering finish. Accessible now, this wine should continue to age gracefully for 6 to 8 years."

Wired For Wine:  Wrap yourselves in the round, supple, somewhat soft texture of this Hess Allomi Estate Cabernet and prepare for the happy.  The confident fruit, dusty earth, and gentle chocolate and spice come together in a fantastically long, elegant finish and leave you wanting more.  The many delicious and solid facets of the Allomi Cabernet make it perfectly suited to lamb, beef, steak in particular, and some game.  Our top choice with this Hess is a classic steak frites.  It's charred edges will pull you into the wine via its earthy, roasted side.  If you're willing to spend a little more time in the kitchen, we suggest a lamb paillard with baby Roma tomatoes, wild arugala and eggplant croutons.  The lamb couldn't get any better next to the succulent red fruits.  Not much time for the kitchen?  We have the answer: the California Cab will light up your favorite style of hamburger like you've never seen it.  Grill away winelovers!  And don't be stingy with the pepper.  A terrific savory ending to the meal is another glass with a chunk of Italian Pecorino Tartufo cheese.  It's a buttery nutty sheep's milk cheese with slivers of black truffles to die for.  Or, we love this rich Hess with a bittersweet chocolate torte with mint chocolate chip ice cream.  Decisions, decisions...
