Vinifying the fruit from each vineyard separately, Ed and Laurie used tailored pump-over techniques for optimal extraction, and then aged the wines in hand-selected, custom-toasted barrels of new French Nevers oak. They then aged the lots separately for just under two years before selecting the blend - one of exceptional depth, complexity and elegance. The final blend has aromas of Bing cherries, cocoa, cedar, allspice and mint. Wired For Wine: Put away your peashooters and bring out the big guns.  There's a new sheriff  in town, and it's in this Beringer bottle.  Time for the lamb, beef, steak or game.  Why not start with the traditional wedge of Iceberg lettuce, sprinkled with bacon and covered with blue cheese dressing.  Follow with a beautiful leg of lamb with little slivers of garlic, all roasted in the oven; it will be the perfect companion to this truly fantastic wine.  Yippikayay wine lovers!!
