Winery:  "The saturated purple hues of the wine hint at the extracted nature of our 2005 Napa Valley Cabernet Sauvignon. Aromas of black cherries, cocoa, and barrel spice are carried through to the palate in a deep and luxurious package. The supple tannins and generous body of the wine make for a wine that is enjoyable on release, but may be aged longer to develop additional complexity.

Following a 7 day fermentation, the wine was left on the skins for a period of extended maceration; in addition to softening the tannins, this process helps extract maximum color and flavor. Once the wine was gently pressed, it was racked to French oak barrels, 60% of which were new. The wine underwent the malolactic fermentation in barrels to "tame" the new barrel tannins and flesh out the body of the wine. Quarterly rackings ensured that the wine was brilliant in appearance and fully developed in body by the end of its time in barrel."
