Wired For Wine: According to Master Sommelier Allan Murray of San Francisco Masa restaurant fame, "Riesling is the greatest wine varietal." That's all we needed to inspire a nice, close look at this Léon Beyer Riesling. While a natural pairing for this lovely wine is fish, the fresh fruit, intense minerality, delicious dryness and supreme balance lend it to so much more. Shall we?... Open your first chilled bottle and offer it with a platter of slightly salty Prosciutto with ripe cantaloupe. If you're in the mood for fish, another great starter is a tartare of yellowfin tuna and diver scallops with grapefruit vinaigrette and Granny apple matchsticks. Both dishes will access different fruit in this Beyer Riesling with outstanding results.
Absolument merveilleux. Moving along the classic route, we suggest a gently sautéed trout almondine accompanied by skinny French haricots. A mild chicken curry will be fantastic with the dry, mineral side of this Alsatian white. And finally, an Asian shrimp dish with a tiny bit of heat will be beautiful opposite the driving fruit of this classy Riesling. Open another cool bottle and serve it with a luscious triple creme St. Andre cheese. The excellent cut and minerality of this Beyer will be perfect for its decadent richesse.
